Butterscotch Brownies

Butterscotch Brownies

 
 
 

Ingredients

6 tbsp/90 mL margarine or butter, softened
1-1/2 cups/375 mL brown sugar
3 egg whites, lightly beaten
2 tsp/10 mL Butter Pecan Extract
2 cups/500 mL all-purpose flour
1 tsp/5 mL Baking Powder
1/2 tsp/2.5 mL salt
1/4 tsp/1.2 mL baking soda
1/2 cup/125 mL butterscotch chips
Cooking Spray
 

Cooking Directions

Preheat oven to 350ºF/180ºC. Beat margarine and sugar until well mixed. Add egg whites and extract; mix well. Add the flour, baking powder, salt, and baking soda; beat until smooth. Stir in butterscotch chips. Spoon mixture into 13 x 9-inch/33 x 23-cm baking dish coated with Watkins Cooking Spray. With knife or spatula, smooth out surface to make even. Bake for 25 to 30 minutes or until brownies test done. Remove from oven and let cool completely on wire rack. 

Makes 24 brownies, 1 per serving.

Why Watkins?

Many people ask me how I got involved in Watkins.  I tell them that a few years ago I watched this great movie with William H. Macy about Watkins salesman Bill Porter.  It is called Door to Door and is a great feel good movie.  It also made me want to find out more about the Watkins company and in doing so I decided to sign up.  I highly recommend the movie and if you are interested in finding out more about the company you can do so at my informational website Your Vanilla Biz.

Chile Con Queso Dip

Here is a good one for your Super Bowl Party.

Ingredients

1/2 cup/125 mL chopped onion
1-1/2 tsp/7.5 mL Garlic Flakes
2 tbsp/30 mL water
1 can (14.5 oz/411 g) stewed tomatoes, undrained
1 can (4 oz/113 g) chopped green chiles
1-1/2 tsp/7.5 mL Chili Powder
1/4 tsp/1.2 mL salt
1/2 tsp/5 ml, more if desired Jalapeño Hot Pepper Sauce
1/2 cup/125 mL reduced-fat shredded Monterey Jack cheese
1 package (8 oz/227 g) reduced-fat cream cheese
 

Cooking Directions

Combine onion, garlic flakes, and water in medium saucepan; cook over medium heat until onion is tender and water has evaporated. Stir in tomatoes, chiles, chili powder, salt, and jalapeño sauce. Cook until hot, stirring occasionally. Add cheeses and heat until melted, stirring constantly. Serve hot.

Makes 12 servings.
